Chicago Italian Beef Sandwiches

I received quite a few requests for this recipe,smoking cessation, so here ya'll go!!!!!!It's not my own recipe, but my daughters hockey coach's. He is born and raised from Chicago.Chicago Style Beef Sandwiches1 beef roast (I usually go with the rump roast)... typically ~4-5 pounds for afull size crock pot1 vidalia onion1 packet of Zesty Italian Dressing powder1 jar (12 oz.-ish) pepperocini peppers in water / vinegar1 jar (12 oz.-ish) giardiniera in water / vinegar (if available)6~8 cloves of garlic (whole or minced... doesn't really matter)1 beef bouillon cube, or 1C beef stockWater (2C-ish?)Cube / dice the onion.If the pepperocini and giardiniera are in oil, strain the oil out. Ifthey're in water / vinegar, just dump the whole contents of the jar into thecrock pot.Throw all ingredients into the crock pot. Add water until ~85% or so of theroast is submerged.Cook on low for 12~18 hours. It's generally done after ~8 hours,Herbal cigarettes, but themeat will become more and more tender as time goes on.You can also cook it on high for ~6 hours, but you'll probably have to breakit apart by force in the pot, or even take the roast out to cut it.I let it cook in the crock pot overnight on LOW, it is tender and falls apart easily.Serve on french bread or Italian bread! It's ridiculously easy to make, perfect for larger groups or a get together!
