Just found my recipe...
Ingredients1 cup wild rice 2-3 cups chicken broth or consomme 3 (or more) strips of bacon 2 sticks celery 1/4-1/2 cup finely chopped onions garlic optional - mushrooms and artichoke hearts 2 tsps freshly chopped parsley oregano (dried or fresh) to taste chopped toasted almonds (a handful) grated parmesan or cheddar cheese or even feta- about half a cup pinch of salt DirectionsCook wild rice in the chicken broth for about and hour and a half. Start with 2 cups of broth, then keep an eye on it and add more as needed. This is the important step to make sure the rice is cooked through and tender before it goes in the oven In a separate pan fry bacon, add the chopped onions and celery to the pan once the bacon is done - if you are using fresh mushrooms,stop smoking now, add them to the pan Toast the chopped almonds briefly if you would like but not necessary Once the rice is done, add mushrooms,quit smoking now, bacon, celery and onions to a casserole dish and mix with the rice Add seasonings - oregano, parsley Add cheese - you can mix it up or put on top Bake at 350 for about 15 minutes
